Lite for Life© Beef Marinade


 

  

Enjoy the satisfaction of giving your loved ones mouth-watering, juicy, beef skewers sizzling hot off the grill. Beef infused with the flavours of this unique beef marinade will have family and friends giving you rave reviews for this satisfying meal. Serve these tender chunks of perfectly seasoned beef with coarsely cut red pepper and red onion pieces accompanied by a side of salad and crusty country fresh bread.

Preparation Time:    25 minutes (marinating time 8 – 24 hours refrigerated)
Servings:                 8

Ingredients:

Marinade:
1 cup (250ml) extra-light virgin olive oil
½ cup (125ml) red wine vinegar
2 tablespoons (30 ml) light soya sauce
2 tablespoon (30 ml) garlic powder
2 tablespoons (30 ml) Clamato seasoning*
2 tablespoons (30 ml) Worchestershire sauce
2 tablespoon (30 ml) crushed black pepper
1 teaspoon (5 ml) powdered sea salt*
3 pounds (1.4 kg) marinating beef
(such as inside round) cut 1.5 inches (7.5ml) thick

 

Method:

Mix all marinating ingredients together in a large re-sealable plastic bag.
Wash and pat dry the beef cut.
Cut beef into
approximately 64 chunks 1.5 inch (5cm) in diameter*
Place beef in marinade in plastic bag.
Seal plastic bag and rotate beef so that all pieces are evenly coated with the marinade.
Place beef in refrigerator and allow to marinate for 8 – 24 hours.
Remove beef from marinade by placing in a colander to let excess marinade drain off beef pieces.
Have ready eight 12-inch (38cm) metal skewers.
Cut red peppers and red onions so there are approximately 32 chunks of both peppers and onions.*
Start with a piece of beef, then a piece of red pepper, then a piece beef followed by a piece of red onion.
Continue alternating beef with vegetables until the eighth piece of beef is at the end of the skewer.*
Pre-heat grill to 375
0F (1770C).
Place beef skewers on direct heat.
Rotate after 5 minutes.
Turn heat down to Medium level.
Continue grilling for 10 more minutes.
Rotate beef skewers.
Turn heat to Low level.
Continue grilling for 5 more minutes.
Remove skewers from grill.
Serve beef on skewers with sides of tossed salad and crusty bread.

 

*Note:

  1. Clamato seasoning that is commonly used to rim glasses.

  2. Grind regular sea salt to a fine powder in a small coffee grinder.

  3. Use 8 pieces of meat per skewer/serving. (8 servings of ½ pound (250gm) beef).

  4. Use 4 pieces each of red pepper and red onion for each skewer.

  5. There will be 8 pieces of beef and 4 pieces each of red pepper and red onion per skewer.
