Who would have thought that a healthy cookie would taste so good! A crispy cookie that will have childrena and adults asking for more. Farmland Oatmeal & Flax cookies from Sister Sharon who found this recipe on the internet. I've modified the recipe a bit to suit our family's tastes.

Preparation Time: 30 minutes
Baking Time: 10 - 12 minutes
Quantity: *100 to 160 cookies depending on the size you make them

1 1/3 cups butter
1 1/2 cups white sugar
1 1/2 cups brown sugar
1 1/2 cups flax seeds
3 large eggs
1 1/2 - 2 teaspoons vanilla
3 1/2 cups unbleached white flour (can mix this up with spelt flour, whole wheat flour, or other flour)
1 tablespoon baking soda
3 cups oatmeal (I used the long cooking type: 10-15 minutes to cook)
1 1/2 teaspoons cinnamon
Raisins, currants, dates, or 1 1/2 teaspoons of ginger powder are optional additions.

Cream butter and sugars until light and fluffy
Sift flour(s) with baking soda
Add flax seeds to flour and lightly mix ins
Add eggs and vanilla to butter mixture
Beat this mixture for about 1 minute, until well blended
Add flour/flax mixture to butter mixture
Mix slowly until well blended, about 2 minutes on low speed
Shape cookie dough into logs*, wrap in waxed paper and refrigerate for 1/2 - 1 hour until firm
Unwrap cookie dough and slice 1/4 inch thick slices
Place on ungreased cookie sheets, or you may use parchment paper covered cookie sheets if you like
Bake 13-15 minutes (10-12 minutes) in a preheated 350-degree Fahrenheit oven
Remove baked cookies from pan immediately after removing them from the oven
Place cookies on cooling racks to cool
Cookies will be crispy
Store in tightly covered container
Cookies freeze well.

*This recipe makes enough cookie dough to make between 100 - 160 cookies depending upon the size of the diameter of the logs. The bigger the diameter of the logs, the fewer the cookies. The smaller the log diameter, the more cookies that can be made
