for Life© Homemade Egg Noodles
When
Homemade noodles are the only bulk that would be used in Homemade Chicken Noodle Soup at my Ukrainian Mother’s table! And that was just fine by my six siblings and myself! Mommy would always make extra noodles, as we kids would love to have them warm with melted butter!
Preparation Time: 30 minutes (+ Drying Time if not cooking fresh)
Quantity: 1 pound (500g) approximate
Ingredients:
3 cups (750 ml) all-purpose unbleached flour
4 medium sized eggs
1 teaspoon (5 ml) salt
½ cup (125 ml) warm water (may use more or less)1
Method:
1. Place flour in bowl.
2. Add salt.
3. Add beaten eggs.
4. Add enough water to make a stiff dough.
5. Knead dough well until air bubbles appear.
6. Let dough rest, covered with a cloth or bowl, for at least ½ hour.
7. Cut chunks off large piece of dough. Keep remaining dough covered to prevent drying.
8. Flour each piece generously as you roll the dough very thinly.
9. Continue to cut a piece of dough from the main piece flour and roll each chunk into thin rounds.
10.Place the dough rounds on a clean cloth on a large surface, being careful not to overlap rounds.
11.Allow the dough rounds to dry slightly, so that the rounds are still pliable.
12.Cut each round in three, flour, stack and roll up the pieces lengthwise.
13.Cut very finely starting at the shortest end of the rolled pieces.
14.Separate the noodles with your fingers and flour them generously.
15.Spread the noodles back on the clean cloth to air dry.
Note:
Cooking and Storing:
Fresh noodles can be cooked immediately in a very large pot of boiling, salted water. The noodles are cooked when they float to the top of the boiling water and are left to cook for a total of 5 – 8 minutes, depending upon how thickly or thinly you sliced the stacks of noodle dough.
OR
Store the thoroughly dried noodles in airtight plastic bags in your freezer for up to 6 months.
Cook noodles straight from the freeze in the same manner as for the fresh noodles.
1 Depending upon the amount of humidity in the air you may use a little less or a little more water.
