for Life© Tossed Salad With Apple Cider Dressing
Perfect for everyday fare or for a dinner party. This delicious salad is an elegant, easily made
nutritious tossed green salad with a tasty dressing that is sure to add the 'wow' factor to meals with family and friends.
Preparation Time: 20 minutes
Grill Time: 2-4 minutes
Servings: 4 side salads, or 2 lunch size portions
2/3 cup (151 ml) olive oil
1/3 cup (76 ml) apple cider vinegar
1 tablespoon (15 ml) sugar or sugar substitute
1/4 teaspoon (3.75 ml) Herbamare Diet Aromatic Sea Salt
¼ teaspoon (1.25 ml) salt
1 head Romaine lettuce, washed, spun dry and coarsely chopped
¼ head Boston leaf lettuce, washed, spun dry and coarsely chopped
1 large red tomato, washed, dried and coarsely chopped
4 ounces (60 grams) goat cheese sliced into 4 pieces
6 asparagus spears
1. Prepare asparagus spears:
Marinate in ¼ cup (60 ml) balsamic vinegar and 1/8 cup (30 ml) olive oil for 5 minutes
Remove from marinade, discarding marinade
Grill 3 – 4 minutes on medium heat grill
Cool to room temperature before adding to salad mix
2. Mix all ingredients together.
3. Pour ½ the dressing over the salad mix.
4. Toss to coat well.
5. Pass remaining salad dressing.
