Tiramisu is a dish
that has as many variations as there are homes in Italy. A stronger
brew of coffee in one home, a little more sugar preferred by another
family – this creamy rich dish is made to each family's personal taste
preferences and that is what will make it your family's dessert. Adjust
the amounts and strengths of additions according to your family's
tastes. Just make sure that you use mascarpone as it is the single
ingredient that makes the real difference in this creamy, cool and
satisfying dessert dish. The highlight of an evening meal with family
and friends, this dish is equally suited to serve with a steaming
cappuccino for a mid-morning or afternoon treat.

Ingredients:
1
½ pounds (725gm ) mascarpone cheese
4
egg whites
6
egg yolks
2
½ cups (625ml ) confectioner's sugar (icing sugar)
40
ladyfingers
1
cup (250ml) freshly brewed extra strong coffee, cooled
½
cup (125ml) Marula Fruit Cream liquor (or Irish Cream liquor)
½
cup (125ml) grated
semi-sweet chocolate
½
cup (72gm) cocoa powder, for dusting
Method:
Whip
egg whites into soft peaks in a grease-free bowl.
Beat
egg yolks with the sugar in another bowl until pale and fluffy (about
5 minutes)
Slowly
whip in mascarpone cheese. (This
step can be done by hand if preferred.)
Add
in the egg whites and slowly blend all together. (This
step can be done by hand if preferred.)
Mix
the coffee with the marula fruit cream liquor in a large bowl.
Dip
the ladyfingers quickly into the brewed, cooled coffee mixture.
Line
2-9x9 inch (23x23cm) serving dishes or 1-13x9
inch (33x23cm) dish with ½ of the ladyfingers.
Cover
with a layer of the mascarpone cream mixture.
Sprinkle
with a little grated chocolate.
Top
mascarpone cream mixture with a second layer of ladyfingers.
Finish
with a top layer of mascarpone cream mixture.
Dust
the top layer of mascarpone cream mixture with powdered cocoa.
Cover
the dish with stretch food wrap and chill in the refrigerator for 3
hours, or up to 36 hours.
Serve
cold.
Note:
-
Because
this dish uses uncooked eggs it is not recommended to serve it to
young children, the elderly or to persons whose immune systems are
compromised.

If
you choose not to add a cream liquor, increase the coffee amount
used by ½ cup (125ml).
